Chocolate, Coconut & Avocado Pudding
 
Ingredients
2 Ripe Avocados
¼ cup Cocoa Powder
Maple Syrup
½ cup Unsweetened Coconut Milk

Instructions
In a blender combine the ripe avocados, cocoa powder, maple syrup & coconut milk.
Blend until smooth.
Place in 4 glass cups and refrigerate. Serve topped with coconut shavings.
Baked Sweet Potatoes with Avocado Mash
 
Ingredients
1 Potato
½ Ripe Avocado
1 tbsp Plain Yoghurt
Cilantro Leaves
Pumpkin Seeds or Pepitas
Salt
Pepper

Instructions
Bake a potato in the oven till the outer layer is well roasted.
Split the baked potato and fill with the mashed ripe avocado.
Top it up with a dollop of plain yoghurt, cilantro leaves and pepitas.
Season with salt & pepper. Serve with a lime wedge.
Egg and Avocado Tartines
 
Ingredients
1 Ripe Avocado
2 Wholegrain Toast
3 Eggs
Sriracha Sauce
Tortilla Chips

Instructions
Scrabble 3 eggs and keep separately.
Mash 1 ripe avocado and spread on two pieces of toast.
Top it up with the scrambled eggs and sriracha sauce.
Serve with crushed baked chips on top for an added crunch.
Avocado Mac & Cheese
 
Ingredients
2 cups boiled Elbow Macaroni
2 cloves Garlic
2 Avocados (Peeled & Pitted)
2 tbsp Lime Juice
Cilantro Leaves
Salt & Pepper
2 tbsp Butter
1 tbsp All Purpose Flour
1 cup Almond Milk
2 cups Shredded Low Fat Cheese

Instructions
Combine the garlic, avocados, lime juice & cilantro in a blender and blend until smooth.
Season with salt & pepper and set aside.
In a saucepan, melt the butter, add the flour and stir till it forms a paste.
Whisk in milk until smooth. Once it starts to thicken, add the cheese & stir until it is creamy.
Add the pasta to the sauce and stir to combine.
Top it up with cheese. Serve warm.
Avocado & Banana Smoothie

Ingredients
1 Avocado chopped
1 Banana
1 cup Sweet Yogurt
2 tbsp Honey

Instructions
Add the avocado, banana, yogurt & honey to a blender.
Blend until smooth.
Place in two large mugs and refrigerate. Serve cold.
